Last weekend, I had a dinner party with my friends, and each one had to bring something. I’m a sweet tooth, so I decided to take dessert. And because I’m also a matcha lover, and like complicating my life a little bit, I decided to make a matcha tiramisu by scratch. Even though it took me quite a while (I’m not actually very skilled in the kitchen, tbh), it was a total hit at the dinner: super sweet and creamy and yummy and oh gosh I’m salivating. A fusion masterpiece that combines the dreamy layers of Italian tiramisu with the bold, earthy magic of matcha green tea. Can’t really go wrong here, can it?
Because, let’s face it, matcha tea powder is like the perfect addition to your desserts. It gives everything a gorgeous green hue that makes any dish pop, and its slightly sweet, earthy, and umami-rich flavor complements and balances the rest of the ingredients. It’s just amazing.
Plus, this dessert is make-ahead friendly, which means zero last minute and hosting stress. Let’s get into it.
Ingredients you’ll need
For the matcha mascarpone cream:
-
3 large egg yolks
-
1/3 cup granulated sugar
-
8 oz mascarpone cheese (at room temperature)
-
1 ½ cups heavy whipping cream
-
2 tsp Matcha DNA’s matcha powder
-
1 tsp vanilla extract
For the matcha, where you’ll soak up your ladyfingers (yum):
-
2 tsp matcha tea powder, sifted
-
1 tbsp granulated sugar (it’s a dessert, we’re going full sweet today, bb)
-
1/2 cup hot water
For assembling:
-
24-30 ladyfingers
-
Additional matcha tea powder for dusting
How to make it
Prep time: 40 minutes | Cook time: 5 minutes | Chilling time: 4 hours
-
Prepare the matcha mascarpone cream:
-
In a heatproof bowl, whisk together the egg yolks and sugar until fully combined.
-
Place the bowl over a pot of simmering water (double boiler method) and whisk until the sugar dissolves and the mixture becomes pale (about 5 minutes).
-
Remove from the heat and let it cool slightly. Whisk in the softened mascarpone cheese until smooth. Set aside.
-
In a separate bowl, whip the heavy cream, sifted matcha powder, and vanilla extract until medium peaks form.
-
Gently fold the whipped matcha cream into the mascarpone mixture until fully incorporated and set aside.
-
-
Prepare the matcha soak: In a shallow dish, whisk together the matcha powder, sugar, and hot water until fully dissolved and slightly frothy.
-
Assemble the matcha tiramisu:
-
Quickly dip each ladyfinger into the matcha soak, but don’t let them sit too long, or they’ll turn mushy!
-
Arrange a layer of soaked ladyfingers in your serving dish.
-
Spread half of the matcha mascarpone cream evenly over the ladyfingers.
-
Repeat the process with another layer of soaked ladyfingers, followed by the remaining cream.
-
Cover and refrigerate for at least 4 hours (if you can leave it overnight, much much better) to let the flavors meld together and everything set.
-
-
Serve and enjoy! When you’re at the dinner party already, right before serving, dust the top with a bit more matcha powder for that final aesthetic touch. Serve chilled.
