How to prep matcha madeleines

Forget your usual muffins. If you’re a baking pro and have nailed your matcha muffins over and over again, then it’s time to level up with some matcha madeleines. These iconic little French cakes are classic, but bring that pop culture green magic you crave and love so dearly.

Perfect if you love a bit of a challenge, this will have you flexing in the kitchen and on TikTok. Trust me, they’re so worth it.

What you’ll need

Go check your pantry and get shopping if you don’t have all of these ingredients.

  • ⅓ cup unsalted butter, plus 1 tbsp extra, softened for greasing

  • 3 ½ tbsp sunflower oil (or any neutral oil)

  • ¼ cup milk

  • 1 tbsp Matcha DNA organic matcha powder

  • 1 ¼ cups plain flour, plus extra for dusting

  • 1 ¾ tsp baking powder

  • ¼ tsp fine sea salt

  • 3 large eggs

  • ⅔ cup caster sugar

  • 1 tsp vanilla extract

Step-by-step instructions

  1. Make a matcha butter mixture: Melt the butter on low heat. Remove from heat and whisk in the oil, milk, and matcha powder until smooth and lovely green.

  2. Prep the dry ingredients: In a separate bowl, sift together the flour, baking powder, and salt.

  3. Prep your wet ingredients: In the bowl of an electric mixer (or simply in another bowl. We’re getting the kitchen quite messy today), whisk eggs, sugar, and vanilla until the mixture is fluffy and light. It’ll probably take you about 5 minutes, so yes, the electric mixer really helps.

  4. Fold the dry ingredients gently: into the egg mixture in small batches. Patience here is crucial to keep the batter airy, and we don’t want to overmix!

  5. Fold in the matcha butter: When you’re finishing up adding the dry ingredients and the batter is looking quite nearly combined, gradually fold in the matcha butter mixture. Again, you’ll want to do this little by little until just blended.

  6. Chill time: Put the batter in the fridge (covered up, of course) and let it chill for at least 2 hours. This part is super important! It’ll be key to get your yummy flavors and that perfect texture and rise.

  7. Prep the pan: Once this time has passed and your batter is chilled, pre-heat your oven at 350 ºF and prep your madeleine pan by brushing with softened butter and dusting with flour. Fill each mold with a heaped tablespoon of batter so that it’s approximately ¾ full (giving it space to riiise and get that lovely shape).

  8. Bake: At 350 °F, as I mentioned previously, for about 10 minutes. Look at those iconic domes rising! And doesn’t it smell amazing?

  9. Cool off: Let them cool for a bit in the pan before gently removing them and transferring them to a wire rack.

Glazing game strong: powdered sugar or matcha chocolate?

Obviously, I’m all about the looks of the recipe (aren’t we all?). So my recommendation? Add a little something to level up the aesthetic game: 

  • Dust off some powdered sugar on top. Easy, effortless, classic. It just can’t go wrong.
