You keep pretending they don’t exist and hope somebody else will eat them or throw them out. But don’t you think they deserve a second chance?

They do. And you can easily give them the matcha makeover they deserve. So let me show you how to take these stale pastries up a notch and turn them into a fun, matcha-infused treat that’s as Instagram-worthy as it is deliciously extra.

Yup, I’m telling you, no one will know they’re day-old croissants cuz they’ll look like they’re straight out of the bakery. Let’s dig in.

Why you need matcha almond croissants in your life

You already know that matcha makes everything better. So, obviously, we’re making matcha almond croissants, loaded with flavor, crunch, and a touch of matcha green tea goodness. This recipe combines the buttery goodness of croissants with the earthy, vibrant flavors of matcha and the crunch of toasted almonds. The best part? It’s super easy, and you probably already have most of the ingredients on hand.

Ingredients

  • Leftover croissants (or fresh ones if you simply want to try this recipe)

  • 1 large egg

  • 3 tbsp granulated sugar

  • 2 tsp Matcha DNA matcha powder (the best matcha powder for your culinary creations)

  • 1 ½ tbsp salted butter (softened at room temperature)

  • 1 tsp vanilla extract

  • ½ tsp almond extract (optional, but highly recommended for that tasty almond flavor)

  • ½ cup almond flour

  • 1-2 tbsp simple syrup (to add a touch of sweetness and moisture to your croissants)

  • 1-2 tbsp sliced almonds

  • A little extra matcha powder for garnish (because yes)

How to make them

  1. Make the matcha almond frangipane: In a small bowl, whisk together the egg, sugar, matcha powder, softened butter, vanilla extract, and almond extract. Make sure everything is blended smoothly.

  2. Add the almond flour: Once the butter mixture is smooth, whisk in the almond flour until you have a creamy, smooth almond matcha paste. This is the good stuff 😌🤤

  3. Preheat the oven and slice your croissants: Prep your oven by preheating it to 350ºF. Then, cut your leftover croissants in half and brush the inside with a bit of simple syrup. This is crucial to bring these babies back to life after a few days of sitting in your counter.

  4. Fill with matcha almond frangipane: Spread your matcha almond frangipane onto the bottom halves of the croissants. Don’t hold back, this is the flavor bomb we’re after!

  5. Add the tops back: Put the croissant tops back on, and then spread the rest of the matcha almond mixture generously on top. 

  6. Sprinkle with sliced almonds: Top it all off with sliced almonds, pressing them gently to make sure they stick. This will give you a lovely crunch with every bite.

  7. Bake ‘em: Place your croissants on a baking sheet lined with parchment paper, and then pop them into the oven. Bake for around 20 minutes until they’re golden brown.

  8. Dust with matcha powder: Once your matcha almond croissants are done baking and slightly cooled, finish them up with a little extra matcha powder for that Insta-worthy look.

Matcha + croissants = perfection

It’s really that simple. You’ve taken something ordinary, and a bit boring tbh (those leftover croissants), and made it extraordinary with a bit of matcha powder.

Want an easier fix? Instead of making the matcha almond frangipane, simply mix up whipped cream with matcha powder and sweetener and use it as the filling for your croissants. Tasty AF, simple AF.
