It’s 3:17 p.m. You had lunch a few hours ago and didn’t have anything for dessert. So you’re standing in front of your fridge, trying to figure out what you can find to calm your cravings for that “something sweet” that will also keep you going for the rest of the afternoon.

We’ve all been there. So what if I told you your 3 p.m. fix could taste like cookie dough and still power you through your to-do list? And like, all ready in 15 minutes? ingredients: what you’ll need

  • 1 ½ cups pitted dates, soaked 10 min in hot water: your binder and natural sweetener

  • 1 cup raw cashews

  • ¼ cup coconut flour

  • 2 tbsp Matcha DNA organic matcha powder: the one that gives these a nice green color and earthy flavor.

  • 1 tsp vanilla extract, for that cookie dough aroma

  • ½ tsp salt

  • ½ cup mini chocolate chips

  1. Prep your dates: Drain the soaked dates and pat them dry so you don’t add extra water. Too much moisture and the mix won’t hold its shape.

  2. Build the base: Put the cashews in a food processor and pulse until they’re roughly chopped. You’re not making nut butter; a bit of texture keeps the “cookie dough” feel.

  3. Add the flavor: Add the dates, coconut flour, matcha, maple syrup, vanilla, and salt. Process until the mixture clumps and holds when pressed between your fingers. If it looks crumbly, keep going! And if it’s still not sticking, feel free to add 1 or 2 teaspoons of water or maple and try again.

  4. Add the chocolate: Sprinkle in the mini chips and incorporate them just enough to distribute. You could do this manually or use the food processor, but be careful not to over-process, we don’t want them to melt into the dough!
