Matcha mousse: a sweet, healthy treat you’ll actually want every day

When it comes to satisfying that sweet tooth while still staying on track with my health goals, I struggle, I won’t lie. After every meal, I just feel like I need a little sweet treat to finish off and be fully satisfied. But with the years, I’ve found out it’s okay, and that it’s possible to make yourself dessert that’s sweet and tasty, but also nutritious.

I present you: matcha mousse. The perfect vegan dessert for meal prep that you can store in small containers, so you’ve got a delicious treat handy whenever you need that matcha-powered pick-me-up.

Why you’ll love this matcha mousse

This matcha mousse is all green flags. It’s creamy and sweet, quite easy to make, and you can customize it. Plus, did I mention it’s vegan? Yup, ideal for all. Here’s why you’ll be obsessed:

  • It’s meal prep friendly: you can prepare in advance and separate it into single-serve containers to take it anywhere you want

  • It’s versatile: you can change up the toppings or mix-ins depending on your vibe. The perfect ground for experimentation

  • It gives you an energy boost: the matcha powder will give you sustained energy without the usual crash of coffee

  • And it’s also quite healthy: with tofu and vanilla protein powder, it’s packed with protein, essential amino acids, and a wide variety of vitamins

Ingredients

  • 1 block of silken tofu (responsible for that creamy texture)

  • 2 scoops vanilla protein powder (gainsss, girl!)

  • 4 tbsp Matcha DNA’s organic matcha powder (my fave part)

  • ⅓ cup dairy-free white chocolate, melted

  • Optional: agave for sweetness, a pinch of salt for balance, and fresh berries for topping

How to make it

  1. Drain the tofu: Wrap the silken tofu with paper towels and put something heavy on top, like a pan or a pot, and leave for at least 15 minutes. This is to remove any excess liquid.

  2. Mix it up: In a blender, put all your ingredients and blend until everything is super smooth and creamy.

  3. Taste test: The best part when you’re the one cooking! Try the creamy mixture and, if you feel like it, adjust the sweetness by adding a bit of agave. You can also add a pinch of salt to balance out the flavors.

  4. Serve it: If you’re meal-prepping, scoop the mousse into small, single-serve containers. Top each mousse with fresh berries or whatever topping you want.

  5. Chill & enjoy: Put your airtight containers in the fridge to chill before eating (it’s worth the wait, trust me).
