How to prep delicious matcha ramen noodles

Wait… matcha in ramen? Yep. It slaps.

I know what you’re thinking: matcha is usually associated with sweet things. A cozy latte moment. A yummy dessert. An ingredient in your beauty routine. But plot twist: it also makes your savory game way stronger. Enter the unexpected hero for your dinner for tonight: matcha ramen noodles.

This recipe is everything: quick, flavorful, a little chaotic (in the best way), and totally camera-ready. It’s giving FoodTok energy, late-night cravings, and “yes I’m that person who makes gourmet instant noodles.” It’s like a glow-up comfort food. And because we’re using instant ramen (no shame here, it tastes good and is the perfect girl dinner), it’s super easy to recreate, even if you’re cooking in your dorm or between episodes of your latest binge.

Ingredients

Don’t freak out, this recipe is instant noodle-level easy. Here's what you'll need:

  • 1 pack instant ramen noodles

  • 2 tsp matcha powder (Matcha DNA, obviously, aka the best matcha powder for your creative recipes)

  • 2 cups vegetable broth

  • 2 tbsp soy sauce

  • ½ tsp miso paste

  • ½ tsp sesame oil

  • 2 tsp grated ginger

  • 1 clove garlic, minced

  • 2 soft-boiled eggs (optional, but… is it really a ramen without a soft-boiled egg?)

  • Sesame seeds + chopped green onions (for putting on top)

  • Optional add-ins: shiitake mushrooms, edamame, spinach, carrots, or whatever you have in the fridge

How to prep

  1. Sizzle the base: In a pot, heat sesame oil. Add the grated ginger and minced garlic. Sauté for 2–3 minutes until your kitchen smells like a tiny ramen shop (yum).

  2. Make the broth: Add vegetable broth, soy sauce, and miso paste. Stir and bring to a low simmer.

  3. Whisk your matcha: In a separate bowl, whisk 2 tsp of matcha tea powder with a splash of hot water to create a smooth, lump-free paste. Pour it into the broth and stir until it turns that dreamy green color.

  4. Make your noodles, bb: Cook your instant ramen according to the package instructions. Drain and set aside.

  5. Assemble your ramen: Place your noodles in a bowl. Ladle in that steamy matcha-infused broth, then top with the soft-boiled egg, green onions, sesame seeds, and your choice of cooked veggies. Snap a pic. Eat. Slurp. Repeat.
