How to prep a matcha marble pound cake

Okay, I feel like people don’t give marble pound cakes the love they deserve. And I’m on a mission to change that right here and now. A total classic, quite easy to make, incredible spongy texture, and that swirl of color? Aesthetic AF. Whether you’re craving something sweet or need to impress your friends with your baking skills, this cake is a total winner.

And what if I said that you could make it even prettier? Like café-level pretty. And totally Instagram-worthy? You know it. Instead of making it with the classic chocolate swirl, we’re bringing in matcha powder, which not only gives it a lovely green color, it also makes it uniquely flavorful.

So grab your Matcha DNA tin and get ready to bake a matcha marble pound cake.

Ingredients you need

Your dry ingredients:

  • 2 cups all-purpose flour

  • 2 tsp baking powder

  • ½ tsp fine sea salt

  • 1 ½ cups granulated sugar

  • 1 tbsp Matcha DNA’s matcha powder (sifted), and an extra ½ tbsp if you want a stronger matcha flavor

Your wet ingredients:

  • 12 tbsp (165g) unsalted butter, at room temperature

  • 4 large eggs, at room temperature

  • 1 tsp pure vanilla extract

Step-by-step instructions

  1. Preheat and prep: Preheat your oven to 350°F. Grease and flour your loaf pan, or simply line it with parchment paper.

  2. Mix the dry ingredients: In a medium bowl, sift together the flour, baking powder, and salt.

  3. Cream the butter and sugar: In another bowl, beat together the butter and sugar, until the mixture is light and fluffy. Add in the vanilla extract and then mix in the eggs, one at a time. Make sure each egg is fully incorporated before adding the next.

  4. Add the dry ingredients: Add the sifted dry ingredients in thirds, folding in carefully (and putting the mixer on low, if you’re using one). You might wanna scrape the bowl every once in a while to make sure everything is mixed together smoothly.

  5. Prepare the matcha mix: Separate the batter in two bowls. Take one of them and sift in the matcha powder. Here’s when you can go all crazy and add as much as you want (I won’t judge). Mix until it’s turned into a lovely, homogeneous green.

  6. Layer and swirl: This is the fun part! To get that marble look, you should go alternating scoops of the vanilla and the matcha batter into your previously lined pan. Then, get a knife or a skewer and make those swirls for that signature effect.

  7. Bake: Bake the cake in the oven for around 55 minutes to an hour, or until a skewer comes out clean.

  8. Cool it off: Before unmolding it and placing it in a wire rack, let the cake cool completely. You can add a bit of icing sugar before serving to give it that café-style finish and make it picture perfect 😌

Wanna elevate your matcha game?
